Good Salt’s next phase: Chef-driven concepts

Good Salt Restaurant Group, the company behind Seito Sushi, Reyes Mezcaleria, The Monroe, The Osprey and, most recently, Sparrow, is poised for further growth.

“We have such a good group, and our chefs and operators are hungry for more,” said Good Salt's co-founder Sue Chin in a May 23 interview.

The chefs of Good Salt each came in and took over a restaurant that already existed, but as Sue Chin noted, the chefs will drive future expansion by partnering with Good Salt to bring to life their own culinary expressions.

"When they want to do their concepts, we can support that,” she said.

For example, Sparrow is an example of more to come.

“Chef Wendy Lopez, her grandma is from Spain. She's Mexican, but the family is from Spain. She always had this dream of opening up a Spanish tapa style place,” said Chin.
